Fruit Salsa
This salsa is inspired by a good friend of mine who loves Salsa so much she named her dog after this favorite food!
Ingredients:
1 ½ cups minced fruit (pineapple, strawberries, or mango – use one or a combo of two or three)
3 Tbsp olive oil
Juice of 1 big lime
1 green onion, minced
¼ cup red onion, minced
1 small jalapeno pepper, minced
Handful of chopped cilantro
Combine all ingredients and use immediately or allow flavors to marinate in the fridge for a few hours. This will only keep in the fridge for about 2 days. Use the salsa to top any grilled fish, chicken, or pork chops.
Using a homemade sauce for your meat rather than store bought is much heathier because you control the ingredients. There is a great array of vitamins in the fruit salsa and great nutrition in the meat you top it with. The fat in the olive oil will help to absorb and digest many of these tasty nutrients!
